Vanilla Chestnut Preserve
Use large French or Italian chestnuts. Put these up early in the fall before the nuts harden.
Cut a half-inch slit in one side of the chestnut shells; let cook in boiling water two minutes, drain, and dry. To each pint of nuts add a teaspoonful of butter or oil and stir and shake in the oven three or four minutes; then, inserting the point of a knife in the slit made in the shell before cooking, remove shell and skin together. Keep the nuts covered while shelling is in process, - to accelerate the work. Let the chestnuts simmer in boiling water until tender. If cooked rapidly, they will be broken.
Take the weight of the chestnuts in sugar and dissolve in half the measure of water; add a few drops of lemon juice to break the grain of the syrup. Let the chestnuts simmer in the syrup till they look as if the syrup had penetrated through them; add a teaspoonful of vanilla extract for each pint of syrup; store in fruit jars.
This is chestnuts in vanilla syrup, closed into jars with no heat processing of any kind. The shelling method is sound and the simmering advice is good, but the storage instruction is the part that fails, and it fails in a way that matters.
- No processing step at allThe recipe ends at "store in fruit jars" — no boiling-water bath, no pressure processing, no time, no temperature. A sealed jar of cooked food held at room temperature with nothing done to it is exactly the condition modern canning practice was written to prevent.
- Chestnuts are low-acidChestnuts sit well above pH 4.6, and a few drops of lemon juice in the syrup does nothing to change that. The lemon here is added to invert some of the sugar and stop the syrup crystallising, not to acidify the preserve. Low-acid food in a sealed anaerobic jar is the classic setting for Clostridium botulinum.
- The sugar is not high enough to preserveEqual weights of sugar and nuts, with the sugar dissolved in half its measure of water, gives a syrup that is sweet but well short of the water-activity level that makes a jam or a candied fruit shelf-stable on sugar alone. The nuts themselves stay wet and starchy in the middle.
- Nothing to see or smellUnlike mould or ordinary spoilage, botulinum toxin does not reliably swell the lid, cloud the syrup or change the taste. The absence of any visible fault in a jar preserved this way is not evidence that it is sound.
- What the recipe does get rightThe two-minute boil, the spoonful of fat, the brief turn in the oven and shelling the nuts while still hot and covered is an effective way to get shell and inner pellicle off together, and the recipe says plainly that keeping them covered speeds the work. The insistence on a bare simmer rather than a rolling boil is also sound — the recipe's own warning is that chestnuts cooked rapidly will be broken.
- If you want the dishChestnuts in vanilla syrup are still made, but there is no widely published tested home-canning process for them. Keep any you make refrigerated or frozen as a short-life preserve rather than following this text.
Chestnuts in sweet syrup belong to the same French and Italian confectionery tradition as marrons glacés, the candied whole chestnuts generally traced to the chestnut country of the Ardèche and to Lyon, where the large cultivated varieties — the ones this recipe calls "French or Italian" — grow big enough to survive repeated soaking in syrup without collapsing. American chestnuts were smaller, and from 1904 the blight began to spread through the eastern forests; whether either fact lies behind this recipe's preference for French or Italian nuts, the text does not say. The instruction to put them up "early in the fall before the nuts harden" reflects a seasonal reality that supermarket shopping hides: a chestnut is a starchy fresh fruit, not a dry nut, and it toughens and dries steadily from the moment it drops.
