Fruit Punch IV
9 oranges 1 1/2 cups tea infusion 6 lemons 1 1/4 cups sugar 1 cup grated pineapple 1 cup hot water 1 cup raspberry syrup 1 quart Apollinaris Mix juice of oranges and lemons with pineapple, raspberry syrup, and tea; then add a syrup made by boiling sugar and water fifteen minutes. Turn in punch-bowl over a large piece of ice. Chill thoroughly, and just before serving add Apollinaris.
A large-format party punch of the sort built in a bowl over a single block of ice. Everything but the sparkling water can be mixed hours ahead.
- ApollinarisA naturally carbonated mineral water from the Ahr valley in Germany, sold everywhere as a table water around 1900. Any dry sparkling mineral water works; add it at the last moment or the punch goes flat.
- Tea infusionFreshly brewed black tea, strained. Brew it on the weak side (about 2 teaspoons of leaf to 1 1/2 cups water, 3 minutes) and cool it before mixing, since long steeping turns bitter and the tannin will dominate the fruit.
- The sugar syrupFifteen minutes at a boil reduces the 1 1/4 cups sugar and 1 cup water to a heavy syrup; how thick it gets depends on how hard it boils, so watch it and pour it into the fruit juices while still fluid. Or simply dissolve the sugar in the hot water off the heat and skip the boil.
- Raspberry syrupA sweetened fruit syrup, not a liqueur and not modern seedless jam. Bottled raspberry syrup or a cordial base of the kind sold for sodas is the closest match.
- Grated pineappleFresh pineapple shredded on a coarse grater, juice and all. Crushed canned pineapple substitutes, but drain off part of the packing syrup or the punch turns cloying.
- Citrus quantityNine oranges and six lemons yield roughly 3 cups orange juice and 1 cup lemon juice, depending on the fruit. Taste before adding all the syrup.
- The ice blockOne large piece rather than cubes, so the punch chills without watering down over an evening. Freeze water in a loaf pan or bowl a day ahead.
- YieldRoughly 2 quarts before the sparkling water, a little over 3 quarts after. That serves 15 to 20 in punch cups.
