Raised Waffles
1 3/4 cups milk 1 teaspoon salt 1 tablespoon butter 1/4 yeast cake 1/4 cup lukewarm water 2 cups flour Yolks 2 eggs Whites 2 eggs Scald milk; add salt and butter, and when lukewarm, add yeast cake dissolved in water, and flour. Beat well; let rise over night; add yolks of eggs well beaten, and whites of eggs beaten stiff. Cook same as Waffles. By using a whole yeast cake, the mixture will rise in one and one-half hours.
An overnight yeast batter rather than a baking-powder one, which is why it wants only two cups of flour and a long rest. The only real translation needed is the yeast.
- Yeast cakeCompressed yeast cakes of this period were commonly around 0.6 oz, though sizes varied. On that basis a quarter cake is roughly 1/2 teaspoon of active dry or instant yeast, and a whole cake roughly 2 teaspoons. Use the small amount for the overnight rise and the larger for the 1.5-hour version.
- Overnight riseCover and leave at cool room temperature, not in a warm spot. The batter will roughly double, then fall back and smell distinctly of beer and yeast, which is the point of the method.
- Scalding the milkBring just to the point where bubbles ring the pan, then cool to lukewarm before the yeast goes in. Yeast is not killed until well above blood heat, around 130-140F, but scalded milk should still be brought down to lukewarm before it meets the yeast.
- Bowl sizeUse a bowl at least three times the volume of the batter. Yeast waffle batter climbs and this quantity has overflowed many a mixing bowl.
- Eggs in the morningYolks are stirred in, whites folded in last and lightly. Fold only until no white streaks remain; overworking flattens the batter and costs you the crisp edge.
- CookingA modern waffle iron on medium-high, about 375F, for 3 to 4 minutes. The batter is thinner than a baking-powder batter, so use slightly less per waffle than you would otherwise and expect steam to slow before they are done.
- YieldRoughly four cups of batter, so around six waffles depending on iron size.
