4 "hard-boiled" eggs 3 tablespoons butter 1 1/2 tablespoons flour 1 cup milk 1/4 teaspoon salt Few grains cayenne Anchovy sauce Make a thin white sauce of butter, flour, milk, and seasonings; add eggs finely chopped, and season with anchovy sauce. Serve same as Welsh Rarebit I.

A savoury of chopped egg in anchovy-spiked white sauce, meant to be spooned over hot buttered toast in the manner of the book's Welsh Rarebit I. It comes together in about ten minutes and depends entirely on how the sauce is seasoned.
