ANNATTO, or Annato, Arnotto, Arnatto

a red color extracted from the reddish pulp which surrounds the seeds of the Arnatto tree, found principally in South America and the West Indies. It is exported chiefly in cakes of two or more pounds weight, generally wrapped in leaves. Externally it usually presents a brown appearance.

Annatto is frequently used in coloring butter and cheese-giving the former the rich yellow hue required by the consumer without affecting its quality.
