BIRDS'-NEST SOUP

a famous Oriental soup made from the gelatinous, mucous substance with which several varieties of Swifts form the lower portion of their nests, building them bracket-fashion on the faces of cliffs. Kanten, or Vegetable Isinglass, is frequently used as a substitute for Birds'-nests.
