MILK POWDER

is desiccated milk, either "whole" or "skim," sold in bulk and canned. It is used principally by bakers and manufacturers of milk chocolate. "Whole milk" power contains from 25% to 27% fat, 30% to 32% protein and 30% to 32% milk sugar.
