a strong flavored soup now sold in cans, containing diced calf's head meat, etc., in a thickened brown soup stock, flavored with various vegetables, herbs and spices, lemon juice, Madeira or sherry, etc. Clear Mock-Turtle is similar in flavor and character ingredients, but the liquid is of consomme type.
