The finer grades are sold in large quantities to the bakery and candy trades for use in the manufacture of various kinds of cakes, breads and confections. Economists urge its more extended use as a general food article, as it is very rich in protein and carbohydrates, especially the former. In Europe, the flour is baked into a bread which has a large sale in Germany and France. The lower grades are used for stock feed, etc.
