POMPANO

one of the most delicious of Southern fish, especially noted for its fine nutty flavor. It is shaped like the sun-fish, with very small scales of grey color, and weighs from one to five pounds. It is in season from May to July, and during November and December. A few pompano are caught each season off the Long Island and New Jersey coasts.
