SKATE, or Ray-Fish

a light-colored, rather large flatfish; found along the North Atlantic coast. It is so extremely ugly that it is seldom shown in its natural condition and the body is so full of bones that, as a rule, only the saddles are sold, but the flesh is delicate and pleasing in flavor and is consumed both fresh and salted. It is in season all the year except during July and August.
