The most acceptable method of preparation is to slice the shoots very thin, stand in ice water for some time and serve with French dressing. They have a fresh, agreeable flavor and the crispness of young celery. Their value is enhanced by the fact that they can be stored for winter use. In Japan, the stalks are eaten both raw and cooked.
