Coffee Ice Cream No. 1

3/4 cup sugar 1/4 cup ground coffee 1 cup milk 4 eggs 1/8 teaspoon salt 2 cups cream, whipped Scald milk, and add coffee. Strain, add sugar and salt, mixed with slightly beaten eggs. Cook until thick, cool and add cream. Freeze for 5 hours. Serves six.

For the Modern Kitchen

A still-frozen custard ice cream from the era when the new mechanical refrigerator replaced the hand-cranked freezer. The whipped cream is what keeps it from setting into a solid block, so treat it as structural rather than decorative.
