Jellied Brazilian Salad

1 tablespoon gelatine 1/4 cup cold water 1 cup boiling water 1/4 cup sugar 1/3 cup lemon juice 1/2 teaspoon salt 1/4 cup celery 1/3 cup strawberries or red cherries 1 orange 4 Brazil nuts 3 ripe olives Soak gelatine in cold water, add boiling water and when dissolved add sugar, lemon juice and salt, strain and put a thin layer on the bottom of small molds. To remaining jelly add celery cut in fine pieces, strawberries, orange sections free from membrane and cut in pieces, nuts shredded and olives finely chopped.

For the Modern Kitchen

A gelatin salad from the era when a household refrigerator was still a selling point. It comes together in minutes but stands or falls on how you handle the layers.
