Danish Spareribs

Crack bones of spareribs, but leave in 1 piece. Fill with apples, sliced and soaked, and pitted prunes; fold up and sew together. Bake 11/2 hours in a little water. Remove threads and serve with potatoes and beets.

For the Modern Kitchen

A Danish stuffed rib roast built from a single uncut sheet of spareribs, folded over fruit and stitched shut. The whole thing depends on getting a flat, pliable rack, so start there.
