Hillside Barbecue

In the dry sections of Mexico where there is little foliage, a Barbacoa Serrana (hillside barbecue) is made in the same manner, except that the seasoned meat is encased in thick dough, usually tortilla dough.

So frequent are these picnics that many an old hacienda has a permanent stone-lined fire pit, and cement tanks standing ready for fermenting the sap of the maguey, a species of century plant, into pulque.
