Marinade for Tough Game

4-6 TABLESPOONS VINEGAR I ONION, SLICED 2 SPRIGS PARSLEY I SPRIG THYME OR SAGE I BAY LEAF I SPRIG CELERY LEAVES PEPPER AND PAPRIKA Add 1-4 tablespoons water to vinegar depending on how strong it is. Lay meat in a deep utensil, add vinegar and remaining ingredients, and turn meat over several times so all are well distributed. Cover and let stand until the vinegar has tendered the meat.

Take badger out of marinade. Season with salt, either lard it with bacon or cover it with bacon, and bake. Or cook like Hassenpfeffer (see recipe under Rabbit).
