Peppermint Drops (Pound and sift four ounces)

1155. Pound and sift four ounces of double-refined sugar, beat it with the whites of two eggs till perfectly smooth, then add sixty drops of oil of peppermint, beat it well, and drop on white paper as above, and dry at a distance from the fire.

A sugar-and-egg-white lozenge of the kind that sat on the boundary between the confectioner's shop and the chemist's. Two things in it are out of step with current practice: the uncooked egg white and the sheer quantity of peppermint oil.
