1002. In running jelly through the flannel bag, it is apt to become cold and refuse to run. To avoid this, it is a good plan to fix the bag to a couple of sticks stretched across a large furnace, in the bottom of which are a few quarts of boiling water, so that the proper temperature is maintained.

MOULDS. 1003. Moulds of various forms are required, for the purpose of mak. ing blanemange, jelly, &c. They are, however, so well known as scarcely to need description. In order to get the articles out, it is only necessary, when they are once quite cold, to loosen the edges with a knife and invert them, giving a shake or two.
