Apple Jelly
Pare, core and slice some good apples into a preserving-pan with enough water to cover them. Place on the fire and boil until they are reduced to a mash, then pour the mixture into a flannel bag so that the liquor cannot drain off. For each pound of filtered apple juice take twelve ounces of sugar, boil and remove any scum that may arise. When boiled sufficiently the syrup should cling to the wooden spoon; or a little dropped on a cold plate should set soon. Put in pots and tie down as with jam.
A plain nineteenth-century jelly method that assumes you know what a jelly bag is and can judge a set by eye. The proportions are given by weight of juice, not volume, which is the one thing worth pinning down before you start.
- The hinge: do not squeeze the bagThe verbatim line reads oddly, but the intent is standard — the pulp hangs undisturbed and the juice drips through of its own accord, usually overnight. Pressing or wringing the flannel forces starch and fine pulp through and gives a cloudy jelly that no amount of later boiling will clear.
- A pound of juiceWeigh the strained juice rather than measuring it: a pound is roughly 15 fl oz, a little under two cups. Twelve ounces of sugar to that pound is about 1 3/4 cups of granulated, a ratio of 3 parts sugar to 4 parts juice by weight, which is on the low side by later standards and depends on the apples carrying good pectin.
- Choose the apples for pectin, not flavourFirm, tart, slightly underripe cooking apples — Bramley, Granny Smith, crabapples, windfalls — set far more reliably than sweet dessert varieties. Modern supermarket eating apples are bred for sugar and low acid and often refuse to gel at these proportions.
- Paring and coring costs you setMuch of the pectin sits in the skins and cores. Pared fruit gives a paler jelly; if your apples are indifferent, wash and quarter them whole instead and leave skin and pips in the pan.
- Preserving-panA wide, shallow, heavy pan with sloping sides — the width matters more than the material, because evaporation is what concentrates the sugar. A deep stockpot will take much longer and scorch at the base.
- Judging the setThe cold-plate test in the text still works: chill two saucers in the freezer, take the pan off the heat before testing, and look for a skin that wrinkles when pushed. On a thermometer the setting point is 220°F (105°C) at sea level, a touch lower at altitude.
- SkimmingScum is trapped air and protein, not dirt. Skim it near the end rather than continuously, or add a small knob of butter at the finish to disperse it — either way it only affects clarity, not safety.
- Tie down as with jamThe period seal was a disc of waxed paper and a cloth or parchment cover tied with string, sometimes over a layer of melted paraffin. Current practice is to fill sterilised jars to 1/4 inch of the rim, seal with two-piece lids and process in a boiling water bath for 10 minutes; paraffin seals are no longer recommended because they crack and admit mould.

Oscar Tschirky's 1896 collection was written for a hotel kitchen that still preserved its own fruit, and apple jelly is the workhorse of that pantry — as a glaze for tarts and roast meats as much as a spread. Apples were the standard source of pectin long before the word existed: French chemists isolated and named the substance in the 1820s, but cooks had known for generations that apple and crabapple juice would set where berry juice alone would not, which is why apple was so often boiled with other fruits to stiffen them. The flannel jelly bag hung from an upturned stool or a broom handle between two chairs was ordinary domestic equipment in the period, and the instruction to let it drip untouched is a rule that recurs often in English and American preserving books of the century.
