Cherry Jam Made Without Sugar
Remove the stems from a sufficient quantity of cherries, wipe them with a cloth to free them from all dust, and remove the stones. Break the stones, put them into a saucepan with a small quantity of water, and boil for a few minutes. Strain the liquor from the stones through a fine hair-sieve, put it back into the saucepan with the fruit and boil the whole until it is reduced to a thick jam, stirring at the same time with a wooden spoon; a little cinnamon and powdered cloves may be added to the jam if the flavor is liked. When sufficiently reduced--that is, when the jam is boiled to a thick pulp--place it in the jars. Leave it until cold and then cover with a thin round of paper dipped in brandy and then with a larger round tied firmly round the pots. This jam will keep for several months.
Two things in this recipe put it outside modern practice: the deliberate extraction of cherry kernels, and a low-acid-adjacent, sugarless preserve held under nothing but a paper lid. Read it as a period document rather than a working method.
- The broken stones are the problemCherry kernels contain amygdalin, which can release hydrogen cyanide when the crushed kernel meets water and the fruit's own enzymes. How much reaches the finished jam here is uncertain: boiling destroys the enzymes and drives off much of the volatile cyanide, but amygdalin itself is water-soluble and the strained liquor goes straight back into the pan. The dose from a small batch is unpredictable because it depends on variety, ripeness and how many stones are cracked.
- Why it was done at allCracked stones give the almond-marzipan note that also flavors noyau and maraschino. Commercial producers achieve it with distilled or heat-treated extracts in which the toxic fraction has been driven off under controlled conditions. A domestic saucepan is not that.
- No sugar means no preservationSugar in jam is not only sweetener; at roughly 60 percent of the finished weight it binds water and stops mold and yeast. Reduced fruit pulp alone, however thick, remains wet enough to spoil. "This jam will keep for several months" was optimistic even in 1896.
- The brandy paper is not a sealA round of paper dipped in spirit and a larger round tied over the pot slows surface mold; it does not exclude air or microorganisms. Nothing here is heat-processed after filling, and the jars stand uncovered until the jam is cold.
- Surface mold is not skimmableThe old household habit of lifting mold off a preserve and eating what is underneath does not hold up. Mold in a high-moisture fruit pulp sends hyphae well below the visible layer, and some species produce mycotoxins that migrate.
- If you want a low-sugar cherry preserveUse a current tested recipe with low-methoxyl pectin or a commercial no-sugar-needed pectin, whole pitted fruit, added acid, and a measured water-bath process time. Do not adapt this text.
- Reading the units"A sufficient quantity" and "a small quantity of water" are genuinely unquantified here, as is the yield. The book assumes a cook who judges by the look of the pulp on a wooden spoon, which is fine for texture and useless for safety.
Oscar Tschirky's 1896 volume gathered a great deal more than Waldorf restaurant cookery; long stretches of it are conventional household receipts of the sort circulating in English and American manuals for decades, and this is one of them. Sugarless fruit pastes belong to a tradition of thrift preserving, made when sugar was dear or when a household wanted fruit "for invalids" and diabetics, who are often said to have formed a market for unsweetened conserves by the late nineteenth century. The cracked-stone infusion is older still: cooks across Europe used cherry and apricot kernels, and bitter almonds, to push stone fruit toward the flavor we now call marzipan or noyau. The hazard was understood only unevenly at the time, though prussic acid poisoning from kernels and their distillates was documented through the 1800s, and the practice survives today only in the form of industrially processed extracts. The brandy-dipped paper cover, meanwhile, is the standard pre-canning closure, in use long before the screw-band jar made it obsolete.
