Canned Berries
Select those the skins of which have not been broken, or the juice will darken the syrup; fill cans compactly, set in a kettle of cold water, with a cloth beneath them, over an even heat; when sufficiently heated, pour over the berries a syrup of white sugar dissolved in boiling water (the richer the better for keeping, though not for preserving the flavor of the fruit), cover the cans closely to retain heat on the top berries. To insure full cans when cold, have extra berries heated in like manner to supply the shrinkage. If the fruit swims, pour off surplus syrup, fill with hot fruit, and seal up as soon as the fruit at the top is thoroughly scalded. - Miss L. Southwick.
This is an open-kettle canning method: the jars are warmed in water, filled with hot syrup and sealed with no measured processing time or temperature. It cannot be reproduced safely, and the points below explain where it fails rather than how to fix it.
- No processing step at allThe berries are heated only until the top layer is "thoroughly scalded" — a judgement made by eye, with no time, no thermometer and no boiling-water bath after sealing. Nothing here guarantees the interior of a packed jar reaches a temperature that destroys the yeasts, moulds and heat-resistant spoilage organisms berries carry in from the field.
- The seal is made on residual heatSealing depends on steam trapped under the lid as the jar cools. With modern two-piece lids that is unreliable, and the zinc-and-rubber-ring closures of the period could fail as well; some period books accordingly advise examining stored jars and re-boiling anything cloudy. A jar that looks sealed and is not will ferment or mould.
- Berries are acid, but that is not a licenceHigh-acid fruit is not a botulism vehicle in the way that green beans or corn are, so the hazard here is spoilage rather than toxin — mould growth, alcoholic fermentation, and the mycotoxins some moulds leave behind in fruit. That is a real reason not to eat it, not a technicality.
- "The richer the better for keeping"The sugar is doing preservation work: a heavy syrup lowers water activity and slows spoilage. Southwick names no proportion of sugar to water, so even that safety margin is undefined, and a light syrup made to protect the flavour removes it entirely.
- Topping up reopens the jarPouring off surplus syrup and adding fresh hot fruit after heating recontaminates the headspace with whatever is on the spoon, the extra berries and the air. Modern practice fills once, leaves a measured headspace, and processes after the lid goes on for exactly this reason.
- If you want canned berriesUse a current tested recipe from a canning authority, which will specify jar size, syrup strength, headspace and a boiling-water-bath time. Read this one as a record of how the work was done, not as directions.
- What is still worth notingThe cloth under the jars and the even heat are sound precautions: they keep glass off a hot metal base and reduce thermal shock. Modern canning instructions address the same problem, though they call for a rack rather than a cloth.
The Dixie Cook-Book appeared in the 1880s, within a generation of the point at which home canning became a mass domestic practice rather than a commercial curiosity — the screw-top Mason jar was patented in 1858, and by the time this book was compiled a Southern household might well put up its own summer fruit in glass. What the recipe shows is how much of the process still rested on the cook's eye: the method described here, filling and sealing hot without any subsequent boiling of the closed jar, was standard advice in American cookbooks, and it persisted in domestic manuals long after agricultural extension services and the USDA began publishing tested processing times in the early twentieth century. The insistence on unbroken skins, on heating spare berries to make up shrinkage, and on a syrup rich enough to keep even if it masks the flavour all belong to a period when a failed jar meant a lost month of fruit, and when contributions were solicited from named local women.
