Poached Eggs on Toast

Break one or two eggs into a dish at a time, taking care that the yolks are not broken, butter your skillet to prevent their sticking, then fill with boiling water; pour eggs in gently, a few at a time, in the mean time, have a platter of toast moistened with hot water and melted butter. Place the eggs on the toast, and on the eggs put a small piece of butter and a little pepper and salt.
