Canned Berries
Select those the skins of which have not been broken, or the juice will darken the syrup; fill cans compactly, set in a kettle of cold water, with a cloth beneath them, over an even heat; when sufficiently heated, pour over the berries a syrup of white sugar dissolved in boiling water (the richer the better for keeping, though not for preserving the flavor of the fruit), cover the cans closely to retain heat on the top berries. To insure full cans when cold, have extra berries heated in like manner to supply the shrinkage. If the fruit swims, pour off surplus syrup, fill with hot fruit, and seal up as soon as the fruit at the top is thoroughly scalded. -Miss L. Southwick.
This is an open-kettle canning method: the jars are heated in water, filled with hot syrup, and sealed the moment the top layer of fruit is scalded. No processing time, no temperature, and no verification of seal are given, and that is why the method has been abandoned rather than merely refined.
- No processing step at allThe jars are warmed and sealed, but never held at a known temperature for a known time. Nothing here guarantees that the interior of a packed jar of berries has reached a temperature that destroys yeasts, moulds and the enzymes that spoil fruit. "When sufficiently heated" is not a measurement.
- The seal is unverifiedNineteenth-century jars sealed with rubber rings and wire bails or zinc caps, and the vacuum was expected to form from the residual heat of the pack. Modern two-piece lids are designed to seal during a timed heat process and to be checked afterwards; sealing a jar by hand off the heat leaves no way to confirm the closure held.
- Mould, not botulism, is the hazard hereBerries are high-acid, so Clostridium botulinum is not the concern it would be with beans or meat. The realistic failure is spoilage organisms surviving in an under-heated jar: fermentation, mould growth beneath an apparently tight lid, and mycotoxins from moulds that grow on stored fruit.
- The cold-water start is a jar-breakage measure, not a sterilising oneThe cloth in the bottom of the kettle and the cold-water start exist to keep thick-walled glass from cracking on uneven heat. They tell you nothing about whether the contents got hot enough, and the recipe never brings the water to a boil.
- "If the fruit swims"Floating fruit means the berries are lighter than the syrup, which is normal and cosmetic. The instruction to pour off syrup and cram in more hot fruit eliminates headspace entirely, which in a modern jar prevents a vacuum forming.
- On the syrupThe parenthetical is sound as far as it goes: heavier sugar syrups hold texture and colour better in storage, lighter ones let the fruit taste of itself. Sugar concentration at these levels is a quality choice, not a preservative one, so a rich syrup does not compensate for the missing heat process.
- What to do insteadConsult a current tested procedure for water-bath canning berries, which will specify jar size, headspace, processing time and an altitude adjustment. Those four numbers are precisely what this recipe lacks.
Buckeye Cookery appeared in 1877, within a generation of the spread of the screw-top and bail-top glass fruit jar, and its canning chapter is full of contributed methods. Recipes are credited by name — this one to Miss L. Southwick. The open-kettle method described here was standard advice in American cookbooks well into the twentieth century; failures showed up as a mouldy jar in the cellar. Systematic processing times for home canning came later, out of agricultural experiment stations and extension services, which is why a book of this vintage can tell you exactly how to keep the syrup from darkening but not how long to boil the jar.
