Carrots (Scrape small fresh-pulled)
Scrape small, fresh-pulled carrots, trim as needed and pack closely into sterilized jars; pour lukewarm water into the canner or cooker and when it boils fill the jars with boiling water; cover the cooker and let the water boil until the carrots are nearly tender; adjust the rubbers, add salted, boiling water, and set the lids in place; let cook ten minutes, then close securely. Carrots of medium size, cut in lengthwise quarters, may be canned with ease.
This is a boiling-water method for a low-acid vegetable, and that is the whole problem. The instructions below explain why the page belongs in a museum rather than a kitchen.
- The fatal gap: low acid, low temperatureCarrots have a pH well above 4.6, the threshold below which Clostridium botulinum cannot grow. Water in an open or lightly covered canner reaches only 212F, which kills vegetative bacteria but not botulinum spores. Sealed in a jar, those spores find exactly what they need: no oxygen, no acid, room temperature.
- Botulinum toxin is not detectableSpoiled low-acid canned vegetables frequently look, smell and taste normal. There is no sniff test, and the toxin is among the most potent known. This is the specific reason carrots, beans, corn and peas are singled out in every modern canning guide.
- "Let cook ten minutes"Current USDA process times for pressure-canned carrots run to roughly 25 to 30 minutes at 10 to 11 psi, depending on jar size and altitude, which corresponds to about 240F. Ten minutes at boiling is not a shortened version of that process; it is a different process that does not sterilize.
- Open-kettle fillingThe technique here, packing raw, cooking in the jar in the canner, then adding boiling salted water and sealing, shares the central weakness of open-kettle canning: the seal is made after the contents have been exposed, and the internal temperature is never verified. Open-kettle methods were dropped from home-economics teaching for exactly that reason.
- "Adjust the rubbers"The recipe assumes jars closed with separate rubber sealing rings, used in this period both with glass-lidded clamp jars and with zinc caps. The rings perished, took a set, and could fail without any visible sign. Modern two-piece lids seal more reliably, which does nothing at all to address the temperature problem.
- If you want canned carrotsUse a current pressure-canning recipe from a tested source, with the jar size, headspace, pressure and time specified for your altitude. Freezing blanched carrots is the other straightforward route.
Books of this kind appeared in quantity in the 1910s, when home canning was promoted as thrift, patriotism and modern housekeeping all at once, and when the domestic-science movement was busy putting kitchen practice on what it believed was a scientific footing. The confidence of the instruction, boil until nearly tender, seal, done, reflects a genuine belief that heat plus a tight seal equalled safety. Botulism was known to medicine by then, chiefly from sausage and preserved meat, which is where the name comes from (Latin botulus, sausage), but the link between home-canned low-acid vegetables and fatal poisoning was only being pinned down in the late 1910s and early 1920s, largely through American laboratory work on canned foods. Pressure canners existed commercially, and agricultural extension services began pushing them hard for vegetables in the years that followed. Recipes like this one were reprinted for decades afterward in old family copies, which is the real reason they still turn up, and the real reason they are worth labelling clearly.
