Cauliflower (Soak the cauliflower head)
Soak the cauliflower, head downward, in salted water half an hour or longer. Set to cook in an open kettle in boiling, salted water.
When cooked about eight minutes and softened somewhat, remove from the fire and separate into flowerets; dispose these in sterilized jars; set them in the cooker, put on the rubbers, fill the jars with water in which the cauliflower was cooked, reheated to the boiling point, and set the lids in place; cover the cooker and let boil rapidly from ten to fifteen minutes. Tighten the lids.
This is a plain water-bath pack of a low-acid vegetable, and it is the single clearest example of a canning method that the twentieth century abandoned. The instructions are readable as history; they are not usable as procedure.
- Why this one failsCauliflower sits around pH 5.6-6.8, well above the 4.6 threshold below which Clostridium botulinum cannot grow. Its spores are not reliably destroyed by boiling, and a sealed jar of wet, low-acid vegetable at room temperature is close to an ideal incubator for them.
- The temperature gapA boiling water bath at sea level tops out at 212F no matter how long it runs. Destroying botulinum spores requires roughly 240F, which only a pressure canner reaches. Ten to fifteen minutes of rapid boiling here does not approach the necessary process.
- Not simply a matter of longer processingExtending the time in the water bath does not close the gap; the temperature, not the duration, is the limiting factor. There is no water-bath schedule for plain cauliflower at any length.
- Cauliflower specificallyCurrent tested guidance does not include a pressure-canning schedule for plain cauliflower at all. It is approved only as a pickled product, where added vinegar brings the whole jar below pH 4.6, or else frozen.
- "The cooker"In books of this period the cooker is usually a hot-water bath outfit - a deep kettle with a rack - rather than a pressure canner, and the instruction to "let boil rapidly" points that way here. Rubbers are the flat rubber sealing rings used with glass-lidded or zinc-capped jars, and "tighten the lids" after processing is the old partial-seal technique those closures required.
- Botulism is not detectableThe toxin has no smell, no taste and need not produce bulging or spoilage you can see. A jar that looks and smells sound can still be lethal, which is why the guidance is absolute rather than a matter of judgment.
- If you want canned cauliflowerUse a current tested recipe from a reliable modern source, which will mean a pickle. Freezing after a short blanch is the straightforward alternative for plain cauliflower.
Household canning books from the 1910s and 1920s were written in a burst of national enthusiasm - wartime food conservation campaigns pushed home preserving hard, and publishers responded with manuals promising that anything from the garden could be put up in glass. The methods described here were taught in good faith by extension services and cookery schools alike; the hot-water outfit was cheap and familiar, while pressure canners were expensive and regarded with suspicion. What the period lacked was reliable laboratory data on spore survival in low-acid jars, and the correction came slowly through the 1920s and 1930s as government laboratories worked out processing times by measured heat penetration rather than by kitchen custom. Pages like this one survive as a record of how confidently a technique can be recommended before anyone has measured it.
