Cucumber Catsup
Pare ripe cucumbers; cut them in halves, discard the seeds and grate the pulp. Drain off the liquid and to each pint of solid pulp add half a pint of strong, cold, cider vinegar, one fourth a teaspoonful of cayenne or a generous half teaspoonful of paprika, one teaspoonful of salt, and two level tablespoonfuls of grated horseradish. Seal tight either in fruit jars or bottles.
This is a raw, unheated vegetable pack sealed airtight, and that combination is the problem. The notes below explain what the recipe assumes and why it fails against current preserving practice.
- No heat step at allNothing in this recipe is ever cooked, scalded, or processed after filling. The jars are sealed on raw pulp with cold vinegar, so nothing kills the yeasts, molds, and bacteria that arrive with the cucumbers and the grated horseradish.
- Cucumbers are a low-acid vegetableFresh cucumber pulp sits around pH 5.1 to 5.7 and is mostly water, so it dilutes whatever acid is added to it. Two parts pulp to one part vinegar gives no assurance of reaching pH 4.6 or below, which is the line below which Clostridium botulinum cannot produce toxin.
- An airtight seal is the wrong direction"Seal tight either in fruit jars or bottles" creates exactly the oxygen-free environment that botulinum spores need. An uncertain acidity plus an anaerobic seal plus room-temperature storage is the classic combination behind home-canning botulism cases.
- "Strong, cold, cider vinegar" is not a measurementHousehold and farm cider vinegars of the period varied widely in acetic acid content and were often homemade. Modern tested pickle recipes specify vinegar of at least 5 percent acidity by weight for a reason; "strong" tells a canner nothing usable.
- The spices do nothing preservativeCayenne, paprika, and horseradish contribute flavor and heat, not safety. At the quantities given (a quarter teaspoonful of cayenne and two level tablespoonfuls of horseradish per pint) they have no meaningful antimicrobial effect, and horseradish's volatile pungency fades over time, though vinegar slows that loss.
- Draining the liquid removes the acid carrierDraining the liquid -- Discarding the drained cucumber juice concentrates the solids, leaving a dense mass of pulp. Vinegar may not diffuse evenly through such a mass, so even a well-acidified batch could hold pockets above the safe pH.
- Units, for referenceA pint is 2 cups, a half pint 1 cup. The recipe gives no yield, and the weight of cucumbers needed for a pint of drained solid pulp will vary widely with the fruit and with how thoroughly it is drained.
- If you want cucumber catsupUse a current tested recipe from a reputable extension service or preserving authority, with specified vinegar strength and a boiling-water process, or make a small batch and keep it in the refrigerator as a fresh condiment rather than a preserve.
Through the nineteenth century "catsup" (also catchup, ketchup) meant almost any thin, sharply spiced bottled sauce, and tomato was only one option among many: mushroom, walnut, oyster, and cucumber catsups all appear in American and British household books of the period, generally traced back to the fermented fish and soy sauces that English traders encountered in Southeast Asia. Cucumber catsup belonged to the class of cold, uncooked, vinegar-based sauces that a household made at the end of a glut, when the vines were producing faster than the family could eat or pickle; the result was pale green and horseradish-sharp. Some books of this era treated "seal tight" as sufficient preservation, though many others called for scalding or hot filling, since the mechanism of botulism in home-canned low-acid food was not understood until well into the twentieth century, and the shift to specified acidity and measured processing times came only after that.
