Fig Jam
Six pounds of purple figs, peeled and cut in half; two pounds of sugar. Cook until thick and seal hot.
The proportions are sound as a jam, but the preservation method is not. Figs are the one common "fruit" that is not acidic enough to be safely canned the way this book describes.
- Why the sealing step failsFresh figs run roughly pH 4.6 to 5.9, which places them in low-acid territory rather than with the acid fruits. Sealing hot jars with no added acid and no timed processing gives Clostridium botulinum spores an anaerobic, low-acid environment in which they can germinate and produce toxin. Modern tested fig preserve recipes all require added lemon juice or citric acid before processing.
- Open-kettle canning"Seal hot" means pouring boiling jam into jars and trusting the cooling vacuum to hold. That was standard practice into the mid-twentieth century and is no longer accepted for any product, because the jar contents and the underside of the lid never reach a verified temperature and the seal itself is unreliable.
- Sugar ratioSix pounds of fruit to two pounds of sugar is about 25 percent added sugar by weight, well below the level at which sugar contributes meaningfully to preservation. A jam relying on water activity for shelf stability sits closer to equal weights of fruit and sugar.
- No acid, no pectinFigs are also low in pectin, which is why the recipe can only say "cook until thick" — the set here comes from long evaporation rather than a pectin-acid gel. The result is a dense, dark, slightly caramelised paste rather than a bright jelly-set jam.
- PeelingThe recipe specifies peeling, which some older preserving instructions call for; modern Mission or Brown Turkey figs have tender skins that break down in a long cook and are normally left on.
- If you want fig jamUse a current tested recipe from a reputable preserving authority, which will specify the acid addition and the processing time for your jar size and altitude.
Fig preserving belongs to the American South and to the Mediterranean, both places where a single mature tree drops more fruit in a fortnight than a household can eat. Figs bruise and ferment within a day or two of picking and cannot be shipped ripe, so before refrigeration the whole crop had to be dealt with at home, immediately, in whatever form kept longest — hence the sheer plainness of instructions like these, written for a cook already standing over a full kettle. The confident "seal hot" is characteristic of preserving books written before the chemistry of low-acid spoilage was widely understood, though the page itself carries no date; the distinction between acid and low-acid foods, and the pressure and water-bath processing rules that follow from it, were worked out gradually in the food-science and extension literature and reached home kitchens over a period that is harder to pin down than a single decade.
