Green Gooseberry Jelly
Cook the gooseberries in a double boiler until the juice flows freely. Turn into a jelly bag and let drip without interference. If clogging checks the flow of juice, scrape the inside of the bag occasionally with a wooden or silver spoon. If desired very clear, strain the juice through a second bag. Measure the juice and put an equal number of cups of sugar in the oven to heat. Let the juice boil vigorously about ten minutes. Skim as needed. Then add the hot sugar, and, as soon as the jellying point is reached, turn into glasses that have been rinsed in hot water. Longer boiling before the addition of the sugar is needed if water be added to the gooseberries.
Gooseberry jelly is much improved if one cup of currant juice be added to each three cups of gooseberry juice. Or the gooseberries and currants may be cooked together for the juice.
A no-added-pectin jelly that depends entirely on the fruit being underripe. Everything else in the method is about clarity and about hitting the setting point without overcooking.
- Use hard green fruit"Green" here almost certainly means immature rather than a green-when-ripe variety. Underripe gooseberries carry the most pectin and acid, which is why this recipe needs no commercial pectin and no lemon. Fully ripe berries tend to give a softer, less reliable set.
- The double boiler is deliberateCooking the fruit over water, with no liquid added, draws the juice out slowly without scorching and keeps the extract concentrated. That is why the recipe notes that if you add water you must boil the juice longer before the sugar goes in — you are evaporating what you added.
- Do not squeeze the bag"Let drip without interference" is the hinge of the whole recipe. Pressing or wringing the jelly bag forces cloudy pulp through and the finished jelly will be muddy. Scraping the inside of the bag, as directed, unblocks it without pressure; a stainless spoon does the job the silver one used to.
- Heating the sugarWarm the measured sugar in a shallow pan in a low oven, stirring once. Adding hot sugar keeps the boiling juice from dropping off the boil, so the mixture returns to temperature quickly and the jelly spends less time cooking. Watch it — sugar left too long will begin to color and clump.
- Judging the jellying pointThe original assumes an experienced eye. In practice that is 220F at sea level (roughly 8F above the boiling point of water where you are), or the sheet test: jelly falling from a cold spoon in a single curtain rather than in drops. Expect this a few minutes after the sugar dissolves; overcooked gooseberry jelly turns dark and gummy.
- Currants are not optional in spiritCurrants -- The suggested cup of currant juice to every three of gooseberry adds color and flavor; the recipe calls the result "much improved." Cooking the two fruits together for a combined extract is offered as a simpler alternative.
- SealingRinsing glasses in hot water and pouring is not a shelf-stable seal by current standards; the period practice was to cover the cooled surface with melted paraffin. Use half-pint jars and a five-minute boiling-water process, or treat the jelly as refrigerator jelly and use it within a few weeks.
This comes from the era when jelly making was still a matter of reading the fruit rather than reading a pectin package — domestic science manuals of the 1910s, in the Boston Cooking School vein, give considerable attention to which fruits will set on their own, and the green gooseberry was among the reliable ones. Gooseberries were a fixture of American and British kitchen gardens well into the twentieth century, and the crop was picked twice: hard and green in early summer for jellies, pies and fools, then ripe for dessert. Their decline in the United States is usually traced to the federal and state bans on Ribes planting in the first half of the twentieth century, when gooseberries and currants were found to host white pine blister rust — which is also why the currant juice this recipe recommends so casually became hard to come by for several generations. The instruction to heat the sugar separately was standard advice in period preserving books, on the reasoning that cold sugar checks the boil and prolongs cooking; it survives now mainly in marmalade making.
