Fleischmann's compressed yeast was sold in foil-wrapped cakes, and this booklet — copyright 1920 — exists to make you confident enough to use two of them at once.

Its real subject is time. Almost every recipe is a schedule: dissolve, beat, set aside about one and one-half hours, mould, let rise one hour, bake forty-five to sixty minutes. The book offers a quick method, a sponge-dough method of five and a half to six hours, and an overnight method of about nine, and is clear about what each buys you.
