Cheese Fondue

1 1/3 cups hot milk 1 1/2 cups bread crumbs 1/2 teaspoon salt 1 1/2 cups grated cheese 4 egg yolks, well beaten 1 tablespoon melted shortening 4 egg whites, beaten stiff Mix hot milk, crumbs, salt and cheese, add the well beaten egg yolks, then stir in the melted shortening and fold in the egg whites beaten stiff. Pour into a greased baking dish and cook 30 minutes in a moderate oven. Serves 6.

For the Modern Kitchen

This is a baked cheese pudding in the American sense of "fondue" — closer to a sturdy soufflé than to anything melted in a pot. The hinge is the egg whites: fold them in with a light hand and bake immediately, or the dish sets dense.
