Excellent Stuffing for Duck

1 1/2 cups bread crumbs pepper and salt 1 tablespoon shortening, melted 2 eggs 1 cup cooked apples, cut in dice 1 cup currants 1/2 cup raisins Combine bread crumbs, seasonings, shortening and eggs. Add fruit and stuff the duck. Serve with glazed apples; garnish with parsley.

For the Modern Kitchen

A sweet-savoury fruit stuffing of the sort that turns up repeatedly in early twentieth-century holiday menus. The recipe assumes you know how to roast the duck, so the useful notes are about quantity, the fruit, and getting the stuffing hot enough.
