Red Cabbage

Boil medium head of red cabbage, shredded fine, with 2 cups boiling water and 2 tablespoons shortening about 2 hours, replacing water as it cooks down. Add 1/2 cup vinegar, 1/2 cup sugar, 1 tablespoon flour and 1/2 cup water. Boil 5 minutes and serve.

For the Modern Kitchen

A plain sweet-sour red cabbage of the German-American kind, thickened at the end with a spoonful of flour. Nearly everything here still works; the cooking time is the one thing worth reconsidering.
