Sand Squares

1/2 cup shortening 1 cup powdered sugar 1 egg yolk 1 1/2 cups flour 1/2 teaspoon salt 1/2 teaspoon cinnamon 2 egg whites 1/4 cup granulated sugar 1/2 teaspoon baking powder chopped almonds Cream shortening, add powdered sugar and egg yolk and beat well. Work in flour, sifted with salt and cinnamon and roll thin. Beat egg white stiff with granulated sugar and baking powder, and spread over dough. Sprinkle with chopped almonds. Cut out and bake in moderate oven at 350 degrees F., until brown. Makes three dozen.

A shortbread-style pressed cookie under a thin meringue, baked in one sheet and cut into squares. The hinge is the thinness of the dough: rolled too thick, the base stays pale and soft under the meringue and never crisps.
