2 tablespoons shortening 1 cup flour 1/2 teaspoon baking powder 1/4 cup sugar 1 egg Mix dry ingredients, cut in butter, add egg. Chill and roll. This will make 5 tart shells.

A short, cookie-like sweet pastry from the era when tart shells were expected to hold a filling without weeping. It is a stiff dough closer to a rolled sugar cookie than to modern short crust, and it behaves accordingly.
