Sweet Pastry Dough No. 2

2 egg yolks 1/4 cup cold water 1 cup shortening 2 cups flour 1/3 cup sugar 1 lemon (juice and rind) Beat egg yolks, add water; combine dry ingredients and mix with egg, then lemon juice and rind. Chill before rolling. This will make 10 tart shells.

For the Modern Kitchen

A rich, lemon-scented pâte sucrée in the old proportions: half as much fat as flour, bound with yolks rather than whole egg. The recipe assumes you know how to bake a tart shell, so the numbers it omits matter more than the ones it gives.
