White Cake

1/2 cup shortening 1 cup sugar 1/2 cup milk 1 3/4 cups flour 1 3/4 teaspoons baking powder 3 egg whites, beaten stiff 1/2 teaspoon vanilla Cream the shortening and sugar. Sift dry ingredients together and add alternately with the milk to creamed mixture. Add vanilla and fold in stiffly beaten egg whites. Bake in three layers, in a moderate oven (375 degrees F.) for 25 minutes. Fill with Praline Filling.

A standard white butter cake of the 1930s-40s, leavened by baking powder with stiff egg whites folded in for lift and pale crumb. The batter is small; read the pan note before you start.
