How to Skin a Cat

The easiest way to skin a catfish, bullhead, or similar slippery sucker, is to slit it in half lengthwise, flop it into hot dry skillet skin side down for a minute, then lift out the flesh, leaving the skin in the pan, which can be scraped off easily.
