Rabbit Liver and Blood

These are the great seasoners of the rabbit meat, and should be included in every outdoor dish. Save blood when dressing animal, pour a little vinegar into it to prevent coagulation, and stir it into gravy last thing for thickening as well as flavor, just as you would use egg yolks. The blood will curdle, too, just like egg yolks, if you let it boil.
