Musher & Co., Inc., importers, of 302 Fifth Avenue at 31st Street, New York — with houses in Genoa, Tortosa and Barcelona — sold Pompeian olive oil. This is their salad booklet, 1920.
Its foreword makes the case for salad twice over: first that it looks beautiful, “a splash of colour that lightens up many an otherwise unattractive spread”, and then that fresh uncooked vegetables carry salts the body wants. On olive oil it allows no compromise at all — substitutes, “to the knowing, are no more substitutes than is paste for diamonds, or cotton for silk.”
