Roast Meats
Sear meat in hot skillet or spider; put it in small granite pail with 2 cups of hot water for gravy; roast in hot oven 15 or 20 minutes. While meat is roasting, put 2 or 3 quarts of water in one of the large kettles and bring to a boil. Remove pail containing roast from oven and place on rack in large kettle, surrounded by boiling water; boil hard 5 or 10 minutes, remove quickly to cabinet for 3 or 4 hours. Cover should be on small pail; this is not necessary if roast is large. A small roast will not require as much cooking as a large one. The liquid in small pail may be thickened with flour if desired for gravy. If the meat is tough, start cooking in the evening, leave in the cabinet over night; in the morning reheat kettle for 10 minutes and return to cabinet until noon; or if wanted for supper, start cooking in the morning and reheat at noon.
This is a fireless-cooker recipe: the meat is heated briefly, then set into an insulated box to finish on stored heat alone. The vocabulary needs translating, but the method itself is the problem.
- What a "spider" and a "granite pail" areA spider is a long-handled cast-iron skillet, originally footed to stand over coals. A granite pail is a graniteware (enamelled sheet-steel) lidded pail; here it holds the roast and sits on a rack inside the larger kettle.
- What "the cabinet" isNot a kitchen cupboard but the insulated compartment of a fireless cooker — a wooden or metal box packed with hay, felt, mineral wool or asbestos, sometimes with heated soapstone discs. There is no active heat source inside it. Everything after the boiling kettle is residual heat, dropping steadily for hours.
- The core failureA few quarts of boiling water and a small pail of hot liquid are unlikely to hold a roast above 140F for three or four hours, and certainly not overnight. The food coasts down through the range where Clostridium perfringens, Bacillus cereus and Staphylococcus aureus multiply fastest, and it can stay there for much of the cooking time.
- The overnight instruction is the worst caseTough meat left in the cabinet from evening until morning, then reheated ten minutes and returned until noon, spends the better part of a day warm. C. perfringens forms heat-resistant spores that survive the initial searing and germinate as the temperature falls; and if S. aureus has grown, its toxin is heat-stable and is not undone by the morning reheat.
- Searing does nothing for safetyThe hot skillet colours the outside only. On a rolled or tied roast, and on any meat that has been boned, cut or ground, bacteria are carried into the interior, which never reaches a verified temperature here.
- No temperature is measured anywhereThe recipe gives vessel sizes and clock times but no internal temperature for the meat and no way to know the cabinet's holding temperature. Size, shape, starting temperature of the joint and the state of the insulation all change the outcome, and nothing in the text lets a cook check.
- If you want the effectLong, gentle, unattended braising is worth having — use a current recipe for a low oven, a covered braise or a slow cooker, all of which hold food above 140F throughout, and confirm the interior with an instant-read thermometer.
Fireless cookers were a genuine craze in American kitchens between roughly the 1900s and the 1920s, sold both commercially and as plans for a homemade hay-box: bring food to a hard boil on the range, seal it in a heavily insulated well, and let stored heat finish the job while the fire went out. The appeal was fuel economy and freedom from tending a coal or wood range in summer, and cookbooks of the period — this one included — printed whole chapters of recipes rewritten for the cabinet, with their characteristic instructions to boil hard, transfer quickly, and reheat the kettle at intervals. The physics is sound for grains and dried legumes, which need only prolonged heat, and the same principle survives in the vacuum flask and in modern thermal cookware. Applied to a large piece of meat, the heat reserve is much less reliable, and the cookers fell out of use as gas and electric ranges spread.
