Grape Jelly
Grapes should be picked over, washed, and stems removed before putting into a preserving kettle. Heat to boiling-

- Preserving kettleA wide, heavy pan with sloping sides, the shape favoured for fast evaporation; period examples were commonly brass or copper, later enamelled. A broad stainless or enamelled pan does the same job today; avoid bare aluminium, cast iron or unlined copper, which react with fruit acid.
- Stems left on, brieflyStems -- The instruction to remove stems is about flavour, not safety: stems and leaves add a green, tannic bitterness.
- Heat to boilingThe grapes are heated with little or no added water; they release their own juice as the skins burst. Crush a layer at the bottom first so nothing scorches before liquid appears.
- The hinge: do not squeeze the bagOnce cooked, the fruit is drained through a jelly bag. Pressing or wringing it forces pulp through and gives cloudy jelly. Let it drip, even if that means several hours.
- Underripe grapes are an assetInclude roughly a quarter slightly underripe fruit. Pectin and acid both fall as grapes ripen, and a batch of fully ripe fruit may never set without added pectin.
- Sugar and the missing halfJelly proportions of this period commonly run around three-quarters of a cup of sugar to each cup of strained juice, boiled to the sheeting stage — roughly 220F/104C at sea level. The page here stops before any figures, so the proportion this recipe actually gave is unknown; do not guess from the fragment.
- Tartrate crystalsGrape jelly commonly throws gritty crystals of potassium bitartrate — cream of tartar. Letting the strained juice stand cold overnight and decanting off the sediment before boiling with sugar prevents most of it.
- SealingPeriod jelly was poured hot into tumblers and capped with melted paraffin. That practice has been abandoned; wax seals crack and admit mould. Use current tested water-bath processing times for jelly instead.
Grape jelly recurs in turn-of-the-century American cookbooks because grapes were one of the few fruits a Northeastern household could count on in quantity every September. The Concord grape, selected in Concord, Massachusetts in the mid-nineteenth century and generally credited to Ephraim Bull, was hardy, heavy-bearing and intensely aromatic, and it made a jelly that set reliably thanks to its high acid and pectin — no commercial pectin existed when this book first appeared in 1896. The Boston Cooking-School Cook Book treats preserving as ordinary autumn labour rather than a hobby, working through jellies, jams, marmalades and canned fruit.
