Almond Cheesecakes

813. Take two ounces of sweet almonds blanched and pounded, the yolks of four eggs and the whites of two, a quarter of a pound of butter melted, a quarter of a pound of sugar, a little wine and brandy, and the rind of half a lemon finely pounded. Put in patty-pans, lined with puff-paste.

For the Modern Kitchen

A small almond tart in the eighteenth-century manner, despite the name: there is no cheese or curd in it at all. The original assumes you know how long to bake a tray of filled patty-pans, so the numbers below fill the gap.
