To Boil Tripe

387. Put it into milk and water mixed in equal quantities, with two or three onions previously boiled in several waters. Serve the whole together, and with it melted butter or oyster sauce, or by some people onion sauce is preferred.

A characteristically terse Victorian entry: no quantities, no timings, and an assumption that the cook already knows tripe. The essentials are a gentle milk-and-water simmer and onions that have been tamed by pre-boiling.
