Peach Jelly
Procure some large peaches, not too ripe; wipe them well and take out the stones; cut the peaches in quarters, and put them in a covered jar. Crack the stones, cut the kernels into small pieces, and put them in with the peaches. Set the jar in a saucepan of boiling water, taking care it does not come over the top, and let it boil till the peaches are soft. Strain them through a jelly-bag to extract all the juice; measure the juice, and put it in a preserving-pan with one pound of sugar for every pint of juice. Boil them for twenty minutes and skin carefully. Turn the jelly into glasses and when cold, lay a round of paper that has been dipped in brandy on each, put another paper on the top and tie down. They will keep in good condition for some time.
The jelly itself is straightforward nineteenth-century preserving, but two elements of this method put it outside what can be recommended now.
- The cracked kernelsPeach stones enclose a kernel that contains amygdalin, which releases hydrogen cyanide when the kernel is crushed, chewed or steeped in a wet medium. This is the same compound that makes bitter almonds dangerous; measured levels in peach kernels vary a great deal between samples, but can approach those of bitter almonds.
- No quantity is givenThe recipe calls for the kernels of every peach used, chopped small and stewed with the fruit. That is an unmeasured dose scaled to however much fruit you happen to buy, steeped in the very liquid that becomes the finished jelly.
- Boiling does not make it safeSome cyanogenic compounds are driven off by prolonged open boiling, but the fruit here is first stewed in a covered jar set in a water bath, which traps volatiles rather than venting them. The strained juice is then boiled twenty minutes with sugar in an open pan, which will vent some free hydrogen cyanide but cannot be relied on to clear the kernel extract carried through into the glasses.
- Why it was doneThe kernels were there for flavour, not substance -- they give the almond-and-marzipan note that Victorian cooks prized in stone-fruit preserves. That flavour can be had from other sources without the compound attached.
- The sealA round of brandy-dipped paper laid on the surface and a second tied over the top is a surface-mould deterrent, not a seal. Preserves closed this way rely entirely on sugar concentration and were expected to be watched and skimmed; it is not a shelf-stable pack by current standards.
- Use a current recipeIf you want peach jelly, work from a modern tested preserving recipe with a proper hot-water-bath process and no kernels.
Oscar Tschirky's 1896 book collects a great deal of general household cookery alongside the Waldorf's own dishes, and this jelly reads more like the older domestic tradition than the hotel line, though that is inference rather than established fact. Cracking stone-fruit pits for their kernels was a long-established practice in English and American preserving: the kernel of peach, apricot and cherry all give the bitter-almond note that flavoured ratafia, noyau and countless creams and custards, and cookbooks from the eighteenth century onward call for them casually. The risk was not unknown -- writers periodically warned against overuse of bitter almonds and kernels -- but the chemistry of amygdalin was not something a home cook was expected to reckon with. The jar-in-a-saucepan method here is the old water-bath technique for extracting juice gently without scorching, and the pound of sugar to a pint of juice is the classic jelly ratio, high enough that the preserve keeps largely on sugar alone.
