Canned Strawberries (Fill glass jars with fresh)
Fill glass jars with fresh whole strawberries, sprinkled with sugar in the proportion of half pound sugar to a pound of berries, lay covers on lightly, stand them in a wash boiler filled with water to within an inch of tops of cans (the water must not be more than milk-warm when the cans are placed in it). When it has boiled for fifteen minutes, draw to back of stove, let steam pass off, roll the hand in a towel, lift out cans, and place on a table. If the berries are well covered with their own juice, take a table-spoon and fill up the first can to the very top of the rim from the second, wipe the neck, rub dry, and screw the top down firmly, observing carefully the general directions for canning berries. Fill another from the second can, and so on until all are finished. Great care must be taken to keep the berries whole and round; as the cans cool invert them occasionally, to prevent the fruit from forming in a mass at one end.
This is a period canning method, and the specific failures are in the process rather than the fruit. The notes below explain what the instructions assume and where they fall short of any current standard.
- The water never covers the jarsThe boiler is filled only to within an inch of the tops of the cans, so the headspace and the underside of the lid sit in steam and air, not in boiling water. Nothing in the upper part of the jar is reliably brought to and held at boiling, which is the whole point of a water bath.
- The seal is made after processing, not duringCovers are laid on loosely, the jars are lifted out onto a table, topped up by spooning from a second jar, wiped, and only then screwed down. Every one of those steps reintroduces airborne yeasts and moulds into fruit that is now cooling and cannot be reheated. Modern practice seals before processing and never opens a jar to top it up.
- No measured temperature anywhere"Milk-warm" water at the start, "boiled fifteen minutes," then "draw to back of stove" is a description, not a schedule. There is no jar size, no altitude adjustment, and no way to know the contents ever reached a lethal temperature for spoilage organisms.
- Strawberries are acidic, but that is not a licenceFresh strawberries sit around pH 3.3-3.6, which makes Clostridium botulinum an unlikely hazard here. The realistic outcomes are mould, fermentation and seal failure over weeks in storage, and a jar that looks sound until it is opened. Use a current tested recipe for strawberry preserves or a properly processed pack instead.
- Inverting the cooling jarsTurning the jars over to keep the berries suspended in their juice can work against the seal, dragging syrup across the sealing surface as the vacuum forms. Syrup or sugar on the rim is a common cause of a jar that seems tight and is not.
- What the equipment terms meanA wash boiler is the large oval copper or tin laundry vessel that sat across two stove holes; in many kitchens it would have been the largest vessel available for a batch of jars. The "cans" are glass jars with zinc screw caps and rubber rings, sealed by the ring rather than by the modern two-piece lid with its heat-activated compound.
- The sugar proportionHalf a pound of sugar to a pound of berries is a 1:2 ratio by weight, roughly a cup of sugar per pound of fruit. It is there to draw juice and hold the berries plump, not to preserve them; it is far too little sugar to inhibit spoilage on its own.
The Dixie Cook-Book belongs to the great wave of American canning literature that followed the spread of cheaper glass jars and the zinc screw cap from the 1860s onward, when putting up summer fruit became an increasingly ordinary household chore. Strawberries were among the harder of the common fruits to can well, because they collapse: the concern here with keeping the berries "whole and round," with the milk-warm start (presumably to avoid cracking the glass), and with inverting the jars so the fruit does not pack into one end suggests a cook judging her work by appearance in the jar as much as by keeping quality. The book's method is a recognisable ancestor of the boiling-water bath, but it predates the home-economics extension work of the early twentieth century that established tested processing times, and it retains the older habit of sealing the jar after heating rather than before -- a step later practice abandoned.
