Hard Winter Wheat

Hard winter wheat is grown as a rule in the southwest and is also used for bread making. This wheat is planted in the fall, and remains in the ground during the winter, usually sprouting several inches before the snow falls. In the spring when the weather becomes warm, the sprouts begin to grow vigorously. Owing to fall planting and difference in climatic conditions, it matures quicker than the spring wheat.
