Canned Pine-Apple
Peel and slice, make syrup in proportion of two and a half pounds best white granulated sugar to nearly three pints of water; boil five minutes; skim or strain; add fruit and let it boil; have cans hot; fill and seal up as soon as possible.
This is open-kettle canning: hot fruit into hot jars, sealed, and nothing more. The method was standard in 1877 and is no longer considered sound, so the notes below explain what the instructions leave out rather than how to carry them through.
- No processing step at allThe jars are filled and sealed with no time in a boiling-water bath, so the only heat the sealed contents ever get is whatever the syrup carries in. Nothing sterilises the headspace, the underside of the lid, or the rim, which is where spoilage organisms settle during filling.
- Why the seal itself is the problemA vacuum in an open-kettle jar forms by chance as the contents cool, not by driving air out under sustained heat. Weak or partial seals are common, and a jar can appear sealed for weeks before mould or fermentation shows. Pineapple is acidic enough that botulism is not the main hazard here; yeasts, moulds and heat-resistant spoilage bacteria are.
- "Let it boil" is not a timeThe fruit boils for an unspecified interval, the jars are "hot" by an unspecified means, and no temperature is given anywhere. There is no way to reconstruct a process from this, which is precisely why a current tested recipe with a measured boiling-water-bath time should be used instead.
- The cans of 1877 were not today's jars"cans" in this period usually meant glass jars closed with a zinc cap and rubber ring, and occasionally tin cans sealed by a tinner. The recipe does not say which, but neither behaves like a modern two-piece lid, and the sealing behaviour the original assumes does not transfer.
- Reading the syrupTwo and a half pounds of granulated sugar to nearly three pints of water is roughly 5 1/2 cups sugar to a little under 6 cups water: near equal parts, which puts it at the heavy to very heavy end of the modern syrup classification, and typical of nineteenth-century canning, where sugar was treated as part of the preservation rather than as sweetening alone.
Canned pineapple appears in Buckeye Cookery at the moment when the fruit was becoming reachable but not yet cheap. Fresh pineapples arrived in northern American cities by rail and steamer from the Caribbean, and a household that had bought one at some expense had every reason to put up what it could not eat at once; large-scale commercial pineapple canning was still decades away from the volume that would eventually make the home version pointless. The section it sits in reflects the state of the art in 1877: John Landis Mason's screw-top jar had been patented in 1858, and cheap glass jars had put fruit preserving within reach of ordinary kitchens, but the reasoning behind the process was still guesswork. Pasteur's work on microorganisms was recent and not yet part of domestic instruction, so cookbooks told readers to work fast and seal tight, on the sensible-seeming theory that speed kept spoilage out. Measured processing times in a boiling-water bath, and the understanding of why they are necessary, belong to the home-economics literature of the following generation.
