Bullock's Brains
Lay some slices of bacon into a stewpan, with onions, carrots, chives, and parsley; blanch the brains in lukewarm water, and put them in with equal quantities of white wine and stock broth, seasoned with pepper and salt. Stew gently for half an hour, and send to table with fried parsley.
