Damsons, Baked, for Keeping
Fill some large stone jars with not over-ripe damsons--none of them must be crushed--and add to them half their weight in pounded sugar. Put the fruit and sugar in layers into the jars. Let the oven get cool, and place the jars, well covered over the top with small flat slate stones, in it. When the damsons have baked from five to six hours they will be done, and should be removed at once to get cold. The top should be first covered with a round of white paper, then melted mutton suet to about one inch in thickness, and lastly, a piece of brown paper or bladder so secured as to exclude the air. If kept in a dry, well-ventilated room, damsons so prepared will keep good for three months.
This is a Victorian dry-preserving method: fruit and sugar baked in stone jars, then sealed under a layer of solidified mutton fat for months of ambient storage. The technique is worth understanding, but the process as described has no temperature, no verifiable seal, and no way to confirm the fruit was ever heated enough to matter.
- Why it fails: no process temperature"Let the oven get cool" describes a coal range falling through an unknown range as its heat dies away. There is no way to know whether the fruit reached 180F or barely 120F, and the whole safety of the method rests on that unknown. A five- to six-hour hold at an unmeasured temperature is not a heat process.
- Why it fails: the fat sealA one-inch cap of set mutton suet over a paper round creates an anaerobic layer above the fruit without sterilising anything beneath it. Fat seals crack, shrink away from the jar wall, and can hide spoilage rather than preventing it, and they gave way to vacuum-sealed glass.
- Why it fails: the closureSlate stones during baking and a bladder or brown paper afterwards are covers, not hermetic seals. Nothing here pulls a vacuum, so air, yeasts and moulds are not reliably excluded over three months of storage.
- Why it fails: sugar levelHalf the fruit's weight in sugar is well below the concentration a jam or a syrup preserve relies on to bind water and stop microbial growth. Damsons are acidic enough that botulism is not the concern here, but surface moulds on stored stone fruit can produce mycotoxins that are not removed by scraping the top off.
- If you want to preserve damsonsUse a current tested recipe from a recognised food-preservation authority: damson jam, damson cheese, or fruit bottled by a validated water-bath method. Frozen whole damsons also keep their flavour extremely well and need no processing at all.
- Damsons themselvesA small, oval, purple-blue plum, sharply tart and high in pectin and acid, sold in late summer and early autumn. "Not over-ripe" is sound advice for any preserving: firm fruit holds its shape and carries more acid and pectin than soft fruit.
- Mutton suetThe hard kidney fat of sheep, which sets firmer and higher-melting than beef suet and so made a better sealing cap. It is now a specialist butcher's item; the packet suet in supermarkets is shredded beef fat, often with flour added.
- BladderA cleaned animal bladder, softened in water and tied down over a jar rim, where it dried tight as it shrank. It was one of the common Victorian jar covers before waxed discs and screw bands, and its performance depended on the skill of the person tying it.
The damson takes its name from Damascus, the fruit having reached Britain by way of the eastern Mediterranean; the older English form damascene survives in some regional dialects. A Victorian household with a damson tree faced a glut and no refrigeration, and baking in sugar was one of several parallel strategies alongside jam, cheese, bottling and steeping in gin. The detail that suggests the period is the dying oven: a coal range that had done the day's baking held useful residual heat for hours, and cooks used that falling temperature for slow work of this kind. Sealing under a thick cap of mutton suet was a common shelf-storage trick before reliable glass closures, used also for potted meats and potted fish, and it faded from cookbooks as the screw-top preserving jar spread in the later nineteenth and early twentieth centuries.
